If you read the post the day before on Buckwheat pancakes this is EXACTLY the same but with one substitution....buttermilk for whatever type of milk you usually use.
Why make these?
Well, these ones are more fluffy. They puff up just like other buttermilk pancakes but have so much more nutrition in them.
I used to make regular wheat flour buttermilk pancakes and never felt full. They tasted great but I think I could eat the whole 5 lb. bag of flour....probably not but you get the point. I was making my regular buckwheat pancakes one morning and decided that I would experiment. I figured the most I would lose is 1 1/2 cups of flour, an egg, some oil, and buttermilk. So, I did it. My husband and I were pleasantly suprised. These tasted great! And with an added bonus, buckwheat is so much more filling, flavorful, and nutritious. After 3 pancakes I threw the towel in. I was satisfied and ready to start my busy day.
Adding the chocolate and blueberries is your preference. Personally, I don't like chocolate with the buttermilk pancakes but you have to try it before you can say it isn't for you. Even without chocolate, these pancakes fill me up so well that it helps with my sugar cravings the rest of the day. I don't completely understand it myself, but hey, what works, works!
Anyways, try these! My favorite is plain ole' pancakes. When I want some extra flavor I make the regular buckwheat pancakes with regular milk (homemade almond milk in my case). That's just my personal preference.
